How would you print white text on a black mug?

Not with sublimation! You could print black full wrap and get the white text that way otherwise you could use one of the black mugs with a white panel but getting the panel all black to match the mug properly isn't easy.

Or.....you could use transfers or screen print.

or you could sandblast the black layer off using a stencil to reveal the white ceramic under the colour layer and then seal it with some krylon.
