a very simple idea for a big breakfast with little effort, for each serving you will need one muffin (not the chocolate type the breakfast bread type) split them and put them into a flat roasting/lasagne dish, top each one with a chipolata sausage sprinkle over some chopped bacon (smoked is best) then mix up 1 egg per person plus 1 egg, with some milk salt and pepper pour over the muffins, put the dish in the fridge overnight, then put in an oven in the morning for about 30 mins, cut slices of breakfast out so everyone gets a muffin each - lovely and no hassle, we have this boxing day after a nice long walk. champers and smoked salmon for brekkie on xmas day

Merry Christmas everybody.
I am cooking my first ever slate as a present for my mum - just realised have it upside down in the press - oops, turned it over and we'll see if it works ....
Laura that sounds like an absolutely fabulous breakfast - the clan is gathering before the New Year and I'll definitely try it, much easier than slaving over full breakfasts for 12 ...thanks for the recipe.

goos luck sarah, as Paul says let us know how it comes out, and the brekkie is lovely and ideal for new year, as you can make it before you start drinking, and eat it when you really dont want to be cooking a breakfast first thing in the morning, my american friend made it, when she said it had muffins in it, i was thinking american muffins - you know the massive cup cakes and thinking eeeewwwww
