Spike, I've been lucky with my Blacks....famous last words ...LOL...I only just out you should keep a mug in the press.
The way my mug press works is it heats up to 10% lower than the heat need and then I put the mug in , it drops the heat a little, it only starts the countdown once the cooking heat has been achieved. Hope that makes sense.
I'll let someone more experienced answer about the sepia colour.
Maybe post a photo so we can see.
