I could be wrong and barking up the wrong tree but when I screen printed anything in the past we had to be very careful about which inks to use. Sub inks and coatings might be fine - strange though that they don't come with any safety advice on. :?

I believe that Sawgrass sublimation inks and all of the mainstream sub coatings have undergone rigorous testing by the US Food and Drug Administration because they are, of course, used on mugs. My understanding of the chemistry of polyester is that it is a fairly chemically inert substance, and hence no safety documentation is needed for polyester products.
