I would normally laminate a photograph onto acrylic sheets, but I'm looking for a more direct method. The digicoat spray says that it is not suitable for acrylic sheets due to the high temperatures involved, but how is sublicrylic any different? Are there any sublimation acrylic sheets available in 3 - 10mm thickness?

I've not seen acrylic sheets for sublimation that thin. I do work with the thicker acrylic blocks which are 15/20mm but very limited on sizes available. I've been speaking to a new company that supply these so will try and look for thinner sheets. I'd be very interested to see these.
