I have an Epson xp 325 printer and I'm in the process of ordering an icc profile.
Question, What paper settings do I need for sub paper?
Any help would be bloody marvelous.

It's up to you really, as long as what you use for the profile targets are what you are going to use once the profile is made - this includes the paper settings, but also the quality settings.
In general terms the paper settings define how much ink is laid down - so which setting you use depends on the sublimation paper you are using, and again, whichever paper you use to make the profile, is the paper you want to use long term.
So, the amount of ink you want to use depends on how much your paper can handle without cockling, and also on what you are transferring to - different coatings, and substrates/fabrics can absorb different amounts of ink.
We use Enhanced Matte on our Epson wide format, as, although our paper can cockle a little bit, the good amount of ink used, helps get the bright saturated colours we like, and transfers well onto the hard substrates as well as the range of polyester fabrics we print to.
