Win 7 64bit all the way. Built my new PC recently and finally got to spec something a little special...at a cost! Also built a PC for a family member for £500 and it seems to run very well indeed.
I guess it depends on your budget and what you want to do with it? Coming from a slow XP laptop you'll notice a difference!

I have a new pc and it has windows 8, I had the old style of drop down put in as I found windows 8 to difficult to get around the way it was. Now I work around the two system quite well. Window 8 works with all my programs that I use.

i use both apple and custom built pc here, i do most of the designs on the mac as i have always used the mac for designing, but for the cutter, printing, and everything else it all gets sent via network to the pc. Cant live without either of them really these days. pc is on win7 x64 ultimate.
