Technically that's a quote.. so not copyrighted.. BUT it's also from the script of a film.. which would I assume be copyrighted.. ??

I honestly thought though that words cannot be copyrighted. I could say "My old man's a Dustman" and copyright it meaning that everytime someone sang that song I would be getting richer!.... BUT..... didnt someone copyright the word "Millenium"?

I think there would already be prior art on "my old man's a dustman" as part of the lyrics to the song. You can't copyright an individual word, but you can copyright a design of a word, as in a logo or trademark. As for not being able to copyright a collection of words, this can't be true, otherwise there would be no copyright on the lyrics of a song, the words in a book, or the script of a film.
If you take the analogy of a painter - you can't copyright the individual paints (words) but you can copyright the finished painting (script)
Now, if the phrase being used is from a work that is copyrighted - i.e. a book, song, or film, and is obviously and recognisably taken from that film, and isn't a phrase in normal everyday usage, then I would say that you're on shaky ground.
